This Egg Roll In A Bowl is a one skillet meal that takes only 20 minutes from start to finish. I love to make recipes that are healthy, satisfying, and delicious, but don’t take a ton of time to make or require a lot of clean up. One skillet meals are my go to when we have a busy week ahead, and I don’t have a ton of time to cook. Whenever we go out to eat, I love to order egg rolls as an appetizer, and I usually end up eating all of them. I love that this classic Chinese appetizer can be made healthier, but still have all the classic flavors. Ingredients for egg roll in a bowl

  • Olive Oil: I like to use extra virgin olive oil, but vegetable or coconut oil work well.
  • Ground Pork: Ground pork sausage, ground pork, or ground chicken all work well. I personally love the flavor of pork sausage.
  • Minced Garlic: Minced garlic in a jar works well
  • Ginger: I used ground ginger in this recipe because it’s a spice I always have on hand. You can always use fresh grated ginger if you prefer.
  • Coleslaw Mix: I like to use the shredded coleslaw mix with purple cabbage and shredded carrots.
  • Green Onions: Sliced greens onions are great for sprinkling on top of the egg roll in a bowl. It adds great flavor and color to the dish.
  • Soy Sauce: I always use low sodium soy sauce to cut down on the salt content.
  • Sesame Oil: Sesame oil is found down the Asian isle of your local grocery store.
  • Rice Vinegar: I like to use rice vinegar in Asian inspired dishes, because it has a mild and slightly sweet flavor.
  • Red Pepper Flakes (optional): Red pepper flakes is optional. If you like spice feel free to add it, but leave it out if you don’t like spicy food.
  • Sesame Seeds: Sesame seeds are used as a garnish are are optional.
  • Spicy Mayo SAUCE
  • Mayonnaise: I like to use light mayonnaise to cut down on the fat.
  • Siracha: Add more or less to taste.
  • Rice Vinegar: Adds a sweet flavor to the mayo and compliments the spiciness from the siracha.
  • Soy Sauce: Like I said above, use low sodium soy sauce.
  • Sesame Oil: Has a nutty taste and is common in Asian recipes.

How to make egg roll in a bowl

  • In a small mixing bowl combine mayonnaise, sriracha, rice vinegar, soy sauce, and sesame oil. Set spicy mayo sauce aside.
  • Heat a large skillet over medium-high heat. Once the skillet is hot add oil and minced garlic, and sauté for 1 minute.
  • Add ground pork to the skillet and cook it until brown and a little crispy, and most of the fat and liquid has evaporated from the skillet. There should not be any extra liquid in the pan.
  • While the pork is cooking, whisk together soy sauce, sesame oil, rice vinegar, and red pepper flakes in a small mixing bowl.
  • Once the pork is thoroughly cooked add coleslaw mix and soy sauce mixture. Sauté the veggies until they start to wilt and become tender.
  • Remove skillet from heat. Transfer egg roll in a bowl to individual serving bowls and drizzle spicy mayo sauce on top. Garnish with green onions and sesame seeds. Enjoy!

Tips for making egg roll in a bowl

  • For an even healthier bowl substitute ground pork with ground chicken, ground turkey, or lean ground beef.
  • Replace soy sauce with coconut aminos if you are on a whole 30 diet or need it to be gluten free.
  • If you can’t find pre-packaged coleslaw at the grocery store, you can make your own. Thinly slice green and red cabbage and sliced carrots. You will need a total of 4 cups chopped cabbage and carrots.
  • This is a great meal prep recipe. Prep on a Sunday, make a double batch, divide it into individual meal prep containers, and enjoy throughout the week as a salad, side, or snack.

Ingredients
  

  • 1 Tbsp. olive oil
  • 1 lb. ground pork, chicken, or pork sausage
  • 2 tsp. minced garlic
  • 1 1/2 Tbsp. ground ginger
  • 4 cups coleslaw mix (shredded green and purple cabbage, and carrots)
  • 1/4 cup sliced green onions, for garnish
  • 1/4 cup soy sauce
  • 1 1/2 Tbsp. sesame oil
  • 1/2 Tbsp. Rice vinegar
  • 1/2 tsp. red pepper flakes (optional)

Spicy Mayo

  • 1/2 cup mayonnaise
  • 1/2 Tbsp. rice vinegar
  • 1 Tbsp. sriracha (add more or less to taste)
  • 1 Tbsp. soy sauce
  • 1 tsp. sesame oil

Instructions
