This homemade chicken tortellini soup is not only quick and easy, but it is also delicious, making it a hit with the whole family. It is the perfect combination of juicy chicken, tasty tortellini, crunchy celery and carrots, and a flavorful broth base.   • 3 large carrots, peeled and chopped
  • 2 celery ribs, chopped

  • 1 tsp. minced garlic
  • 3 cups low sodium chicken broth
  • 2 chicken breasts
  • 10 oz. frozen cheese tortellini

How To Make Homemade Chicken Tortellini Soup

Step 1: Heat butter in a large pot over medium heat.

Step 2: Add carrots, celery, and onion to pot and cook for 3-4 minutes or until onions are soft and fragrant. Add garlic and sauté for 30 seconds.

Step 3: Add chicken broth, chicken breast, Italian seasoning, salt, and pepper. Bring to a boil then reduce heat to low. Cover and simmer until chicken is cooked through (about 15 minutes).

Step 4: When chicken is cooked, remove from pot and shred or chop.

How small do I need to chop my vegetables?

This is totally a personal preference, but I usually chop mine up pretty small – not quite minced because you still want the texture, but small enough that they will cook quickly.
