How To Make Hot Chocolate Cookies
Cookies
- In a microwave-safe bowl, melt butter. Slowly add in semi-sweet chocolate chips and stir until completely melted. If the chips aren’t completely melted, microwave for 15 seconds at a time, stirring until completely melted. Set aside.
- In the bowl of an electric mixer, mix together eggs, sugar, and vanilla until well combined.
- Add in baking powder, salt, and Dutched cocoa powder and mix together. Slowly add in the flour and blend well.
- Scrape down the sides and mix on low. Add in the chocolate mixture until well combined.
- Refrigerate dough for about 15 mins.
- Preheat the oven to 325°. Line baking sheets with parchment paper. Scoop dough onto the pan using a 1½ inch cookie scoop. Bake for 10-12 mins.
Marshmallows
Cut large marshmallows in halt (crosswise). Once you remove the cookies from the oven, place half of a marshmallow on top (with the cut side down). Return the cookies to the oven until the marshmallows are slightly golden around the edge. PROMPTLY remove the cookies from the oven. Remove the cookies from the cookie sheet and place them on a cooling rack.
Chocolate Icing
- Using an electric mixer, mix together powdered sugar, melted butter, Dutched cocoa powder, hot water, and vanilla. Mix until there are no lumps. While the cookies are still warm, spoon a small amount of icing on top of each marshmallow. Use the back of the spoon to spread the icing around if needed. If desired you can top cookies with sprinkles, before the icing dries.
- Let icing set before serving.

Sure! If you don’t have any jumbo marshmallows on hand, you can use mini marshmallows instead. I would cut two mini marshmallows in half and arrange the four pieces in a circle in the center of the cookie.
The icing on these hot chocolate cookies is honestly one of my absolute favorite parts of this recipe, but if you want something not as sweet, you could definitely leave the icing off. I’d recommend at least serving it on the side, so others can dip their cookie in the icing.
