Easy No-Bake Chocolate Peanut Butter Oat Bars
Ingredients
- 1 cup butter
- ยฝ cup brown sugar
- 2 tsp vanilla extract
- 3ยฝ cups oatmeal
- 1ยผ cups chocolate chips (I use semisweet)

Instructions
- Line an 8×8 or 9×9 inch square baking dish with parchment paper. Leave the edges long enough that that they hang over the sides of the pan. This will make removing the bars easier.
- In a medium saucepan, melt butter and brown sugar over medium heat until the butter has melted and the sugar has dissolved.
- Add in vanilla, and slowly start mixing in the oats. Cook over low heat for 3-3ยฝ mins until the ingredients are blended.
- Pour half of the oat mixture into the lined baking dish evenly spreading and pressing the mixture into the pan.
- For the chocolate filling, melt the peanut butter and chocolate chips together in the microwave until it is smooth.
- Using about ยพ of the chocolate filling, pour it over the oatmeal crust, making sure to spread it out evenly.
- Pour the remaining oatmeal mixture over the top of the filling, and press it in gently.
- Finally, drizzle the remaining chocolate over the top.
- Refrigerate for 1-2 hours or until the bars are completely cool. Cut and serve!
