No-Bake Chocolate Oatmeal Bars

These no-bake chocolate oatmeal bars are my favorite go-to treat on a hot summer day. They are super easy to make and delicious to eat!

If you are anything like me, there is no way you are going to turn your oven on in the middle of a hot summer day. Here in Utah, we have several summer days that get over 100 degrees. That being said a girl still needs her chocolate! These bars are perfect because you get that wonderful peanut-buttery chocolate taste with the yummy chewiness from the oatmeal.

Ingredients For No-Bake Chocolate Oatmeal Bars

  • Butter- I always try to use unsalted butter when possible but either will work just fine.
  • Brown Sugar- Light brown or dark brown both work.
  • Vanilla- I love my Mexican vanilla but any vanilla extract will work.
  • Rolled Oats-Make sure to use rolled oats and not quick oats.
  • Chocolate Chips – Semi-sweet chips are perfect in this recipe, you get the perfect balance of sweet and chocolaty. If you like a sweeter treat you can use milk chocolate.
  • Peanut Butter- I like to use creamy but Chunky would be delicious also.

Making No-Bake Chocolate Oatmeal Bars

  • Line an 8×8 or 9×9 inch square baking dish with parchment paper. Leave the edges long enough that that they hang over the sides of the pan. This will make removing the bars easier.
  • In a medium saucepan, melt butter and brown sugar over medium heat until the butter has melted and the sugar has dissolved.
  • Add in vanilla, and slowly start mixing in the oats. Cook over low heat for 3-3ยฝ mins until the ingredients are blended.
  • Pour half of the oat mixture into the lined baking dish evenly spreading and pressing the mixture into the pan.
  • For the chocolate filling, melt the peanut butter and chocolate chips together in the microwave until it is smooth.
  • Using about ยพ of the chocolate filling, pour it over the oatmeal crust, making sure to spread it out evenly.
  • Pour the remaining oatmeal mixture over the top of the filling, and press it in gently.
  • Finally, drizzle the remaining chocolate over the top.
  • Refrigerate for 1-2 hours or until the bars are completely cool. Cut and serve!

Tips and Variations

Do I need to let each layer cool? Nope, not at all. Letting the bars cool all at once helps everything stick together. The only time you need to let them cool is after you are finished putting them together. Let them cool for 1-1/2 to 2 hours before cutting and serving them.

How do I store them? As with any baked goods, it is important to store them in an air-tight container. I also like to store them in the refrigerator, it gets pretty hot here in Utah during the summer.

Can I make these bars in advance? Absolutely! You can make these bar the day before. Simply store them in the refrigerator with 1-2 layers of plastic wrap on them to keep them fresh.

How can I change them up? There are several fun ways to change these bars up! Some of my favorites are:

  • Cut up Andies Mints and sprinkle them over the top.
  • Mini M&M’s
  • Carmel
  • Add Marshmallows.
  • Tops with butterscotch or peanut butter chips.
