Mexican Pasta Salad is such an easy and delicious pasta salad that is packed full of flavor. Made with black beans, corn, tomatoes, cilantro, tossed in a creamy salsa dressing. This pasta salad recipe is perfect for any BBQ and will be a hit will everyone.

Mexican Pasta Salad

If your looking for something different than the classic pasta salad everyone brings to BBQ’s, you have to try this Mexican Pasta Salad Recipe. The creamy salsa dressing is enough to convince even the pickiest eaters that this salad is so yummy! One of the best things about this pasta salad is that I usually have all the ingredients on hand, and it only takes 20 minutes to prepare. Some of our other pasta salad recipes are our Veggie Pasta Salad, and Hawaiian Macaroni Salad.

Mexican Pasta Salad Ingredients

  • Pasta Noodles: I used Farfalle (bowtie) pasta in this recipe. Other great pasta noodles are elbow, rotini, and penne are also great options.
  • Black Beans: Drain and rinse black beans well with water and pat dry before adding them to the pasta.
  • Corn: I prefer to use thawed frozen corn in this salad. It has more flavor and crunch than canned corn.
  • Tomatoes: Cut cherry tomatoes in half lengthwise. If you prefer smaller tomatoes, cut them in quarters.
  • Cilantro: Cilantro adds such a great Mexican flavor to the pasta.
  • Mayonnaise: I like to use lite Mayonnaise when I’m make pasta salad. If you prefer full fat that also works. I don’t recommend using Miracle Whip.
  • Salsa: This recipe calls for jarred or canned salsa of your choice. I like to use our Homemade canned salsa recipe.
  • Taco Seasoning: You can use 3-4 Tbsp. of our homemade taco seasoning recipe, or 1 package of store bought taco seasoning.

How To Make Mexican Pasta Salad

  • Cook pasta according to package directions. Drain and rinse with cold water, and set aside until cool and dry.
  • Once pasta has cooled add it to a medium-large mixing bowl.
  • Add black beans, thawed frozen corn, cherry tomatoes, and cilantro.
  • In a small mixing bowl whisk together mayonnaise, salsa, and taco seasoning.
  • Pour homemade dressing over pasta and veggies and toss to coat completely.
  • Cover and store in the fridge until ready to serve. Enjoy!

How to store pasta salad

Pasta salad should be stored in the fridge when you are not serving it. Place any leftovers in an airtight container in the fridge for 3-5 days.

Tips for the best macaroni salad

  • Be sure not to over cook or under cook your pasta. You want cook it until al dente, this allows the noodles to absorb the right amount of dressing.
  • Rinse pasta in cold water to stop the cooking process.
  • Avoid making pasta salad too far in advance. Prepare salad the day of or the day before serving to avoid having soggy and dry pasta salad.

What to serve with Mexican pasta salad

This Mexican Pasta salad goes well served alongside any grilled meat. Weather you serve it with grilled or fried chicken, steak, hamburger, or hot dogs, you will not be disappointed.

Ingredients
  

  • 12 oz. farfalle pasta
  • 1 15 oz. can black beans drained and rinsed
  • 1 12 oz. bag frozen corn thawed
  • 1 cup cherry tomatoes halved
  • 1/2 cup cilantro chopped
  • 1 cup lite mayonnaise
  • 3/4 cup salsa canned or jarred
  • 3-4 Tbsp. homemade taco seasoning, or 1 package of store bought taco seasoning.
