  • Granulated & Brown Sugar

How To Make Oatmeal Raisin Cookies

  1. Pre-heat oven to 350°. Line a baking sheet with parchment paper and set it aside.
  2. Soak raisins in a bowl of water.
  3. In a large mixing bowl using a whisk attachment add softened butter, brown sugar, and granulated sugar. Mix until light and fluffy.
  4. Add eggs and vanilla and mix well.
  5. Next, add baking soda, cinnamon, salt, and corn starch. Mix until well blended.
  6. Switch to a paddle attachment and slowly add in flour. When flour is mixed in well add in quick oats and mix until well combined.
  7. Drain raisins well and add them to the dough. Mix just until the raisins are well incorporated.
  8. Using a 1½ inch cookie scoop, and scoop the cookie dough onto the lined baking sheet.
  9. Bake cookies for 8-10 mins. until slightly golden around the edges. Remove the cookies from the oven and let them cool completely before eating.

    I usually cook keto, but since I wanted to treat my crew of roofers, I went in search of a recipe for the non-keto ingredients I had left on my shelf. I wanted to amp up the flavor, so I threw in a slosh of molasses, and that seemed to kick up the flavor nicely.
