I am going to change your life with this BLT Waffle Grilled Cheese sandwich recipe. Made with crispy bacon, a creamy avocado spread, crisp tomatoes, and gooey cheese all on a waffled buttermilk biscuit. So good your family will want this for every meal.
I was looking for a fun way to keep my kids interested in dinner. In doing so I came up with with fun mash up of a BLT and a grilled cheese sandwich. The crunch from the waffled biscuit combined with the bacon, avocado spread and all the melted cheese is amazing. It is such a simple recipe yet is has amazing flavor.

BLT Waffle Grilled Cheese Ingredients
- Biscuits: I have found that refrigerated buttermilk biscuits best in the waffle iron. Biscuits with added butter tend to be to greasy.
- Bacon: I like to use thick cut smoked bacon for the most flavor.
- Avocado: Quality Has avocados are really what will make this recipe great. A ripe avocado, not a mushy or firm texture and a well rounded flavor.
- Tomatoes: My favorite variety of tomato to use is tomatoes on the vine. Better boy and better beef tomatoes are a great option as well.

How To Make A BLT Waffle Grilled Cheese
- Preheat oven to 400หF. Place bacon on a parchment paper lined baking sheet in a single layer. Bake for 20 minutes or until browned and crisp then transfer to a paper towel-lined plate to cool. Set aside.
- While Bacon is cooking preheat a waffle iron to a medium-high setting.
- In a medium bowl, add a peeled and seeded avocado, black pepper, fresh cilantro, salt, and garlic powder. Mash with a fork until it reaches your desired consistency. Set aside.
- One at a time place each biscuit into the waffle iron. Cook until golden brown, remove and set aside. Repeat until all biscuits are cooked.
- Line a baking sheet with parchment paper and set aside.
- With a small spatula, spread avocado mixture on bottom waffle biscuit. Then, add 1 slice of provolone cheese. Next, add bacon, tomato and one more slice of provolone cheese. Add a waffle biscuit to the top and place on baking sheet. Repeat until all sandwiches are put together.
- Cover sandwiches with foil and bake at 400หF for 10-15 or until cheese has completely melted.
- Serve immediately and enjoy!
Ways To Change It Up
- Ditch The Avocado: Replace the avocado spread with your favorite pesto sauce. This adds so much flavor and is one of my favorite ways to change it up.
- Change The Cheese: Swap the cheese out with muenster cheese. It has a very mild flavor and a smooth, soft texture. It make the sandwich even creamier.
- Heat It Up: Sprinkle a little crushed red pepper over the top of the avocado spread. A perfect addition for anyone who likes a little heat.
- Add More Protein: Add a fried, poached or scrambled egg and you have the perfect breakfast sandwich.
Do I Have To Use Refrigerated Buttermilk Biscuits?
No, you don’t have to make this BLT sandwich with refrigerated buttermilk biscuits. I have also used a dry biscuit mix such as Bisquick and they come out amazing. But if I am not in a hurry my favorite way to make the waffle biscuit. Is with my homemade biscuit recipe and cook them in the waffle iron. They come out so buttery and flaky and the flavor compliments the BLT so well.
If you don’t want to make it with biscuits. You can use your favorite bread and toast it in the waffle iron.

Ingredients
- 8 slices bacon (halved)
