Classic chicken Salad Recipe

I love a good Summer salad recipe to take to a BBQ or potluck, but I also love to make them and have some easy go to lunches throughout the Summer. A couple of my favorite and easy salad recipes are our Broccoli Salad Recipe and our Egg Salad.

Chicken Salad Ingredients

  • Grilled chicken: Grilled chicken or rotisserie chicken shredded are both great options. You can use canned chicken if your in a pinch, but of course fresh is better.
  • Grapes: You could use red or green seedless grapes.
  • Apples: Use any variety of apples that you prefer, and chop into bite size pieces.
  • Celery: Adding celery adds a nice crunch to the recipe.
  • Pecans: Pecans, sliced almonds, or walnuts are all great options.
  • Mayonnaise: I prefer lite mayonnaise to cut back on the fat and calories in the salad.
  • Greek Yogurt: I also like to use non-fat plain Greek yogurt.
  • Dijon Mustard: Dijon or yellow mustard are both great options.
  • Salt and pepper: Add more or less to taste.
  • Onion Powder: Adds a just the right flavor to the homemade dressing.
  • Croissants or Sandwich Bread: Croissants or sandwich bread both work well to serve as a sandwich.
