Mini cheesecake bites have been a favorite dessert recipe in my family for years. Whether I make them for a family dinner, game day, or even as a finger food style dessert for a shower or potluck, I never go home with any leftovers! They are super simple to make and I love that I can use refrigerated cookie dough for the crust! In fact, I’ve started to always keep some on hand so that when something comes up and I need to make a sweet treat, I can whip these easy cheesecake bites together in only a few minutes. These sweet little dessert bites are also very fun to customize! I usually top them with strawberries, but you can use any of your favorite cheesecake toppings.

You will love how simple (and quick!) this cheesecake bites recipe is to make. To make this easy dessert recipe, you only need 6 ingredients! You need sugar cookie dough, cream cheese, whipping cream, powdered sugar, vanilla, and strawberries. Yep, that’s it! To start making these mini cheesecake bites, put the cookie dough into a prepared mini muffin pan and bake them until the edges are slightly brown. Once they are ready, take them out of the oven and poke down the centers so that you can start filling them with the delicious cheesecake filling! Your next step is to make the cheesecake. To do this, beat together the cream cheese, powdered sugar, and vanilla. In a different bowl, you will whip your heavy whipping cream until it forms stiff peaks. Next, you’ll fold the whipped cream into the cheesecake mixture (this part is super satisfying!). Once your cheesecake filling is mixed, spoon the filling into each sugar cookie cup. All that is left to do is top each one with strawberries, and your easy cheesecake bites are ready to serve!

Popular Substitutions & Additions

One of the best things about these mini cheesecake bites is how versatile they are. You can add any of your favorite cheesecake toppings! Some of my favorites are mini chocolate chips, blueberries, salted caramel syrup, chopped nuts, and raspberries. If you really like chocolate, you could even try this cheesecake bites recipe with chocolate chip cookie dough instead of sugar cookie dough. If you want to go more towards brown sugar and cinnamon flavors, try these cheesecake bites with snickerdoodle cookie dough as the crust!

Storage & Leftovers

Leftover cheesecake bites should be stored in the fridge in a sealed container. They will last for up to 2 days. Keep in mind that the crust may start to get a little soggy over time, so you’ll want to eat these tasty mini cheesecake bites sooner rather than later.

Nope! That’s one of the best parts of the recipe. The filling is no-bake! Once the cookie dough is baked, you’re finished using the oven.

Can I use homemade cookie dough for these mini cheesecake bites?

Sure! I like store bought because of how easy it is, but you can definitely use your own for these cheesecake bites!

Can I use premade whipped cream?

For these mini cheesecake bites, you’ll need to make your own whipped cream so that the ratios and sweetness are just right. It’s super easy, I promise!
