A delicious Texas Sheet Cake in cookie form? Yes, please! These soft, tasty cookies are basically just chocolate that is covered in more chocolate. Need I say more? These chocolate cake mix cookies are just as good as a traditional Texas sheet cake, but I love that they are easy to grab and eat without the hassle of slicing the cake, putting it on a plate, and eating it with a fork. Texas Sheet Cake Cookies are chocolate cookies made with cake mix and iced with a melty chocolate icing, making them a great option if you are taking a dessert to a get-together or if you just want something fresh to put into your cookie jar.

One of the best parts of this cookie recipe is that the dough and frosting are easy to make – you can even use boxed cake mix! To make the chocolate cookie dough, you will combine the cake mix with eggs, oil, and cinnamon. That’s all that you need to do to make the dough! Once it is mixed, you can scoop it out onto the prepared baking sheet and bake the cookies. While the cookies are baking and cooling, you can mix up the chocolate frosting. This frosting is different from regular cookie frosting – you want to make it warm so that it can be poured over the cookies. It hardens once it cools. To make this chocolate cookie frosting, mix together cocoa powder, butter, and milk in a saucepan over medium heat until it is smooth. Then you can spoon it over your cookies. You will see it harden and have almost a “crackle” type texture when you bite into it. The icing is really what sets these Texas Sheet Cake Cookies apart from a regular frosted chocolate cookie.

Nope! You can use your favorite chocolate cake mix. I usually opt for Duncan Hines Perfectly Moist Devil’s Food Cake Mix.

Can I freeze this cookie dough?

Yes, you can freeze this cookie dough before it is baked. You won’t want to freeze the frosting, though. Thaw the dough completely in the fridge before baking.

Can I use olive oil instead of vegetable oil?

Sure, if you prefer using olive oil for baking, you can use it in place of vegetable oil for these Texas Sheet Cake Cookies.

What happens if my frosting starts to set before I’m ready to ice the cookies?

If your frosting starts to set, you can warm it back up on the stovetop over low heat.

The dough seems thick – what is the easiest way to roll the cookies?

This thick dough may make these cookies seem difficult to work with, but if you use a cookie scoop you should not have any issues.
