- Lean Ground Beef: Ground turkey or ground chicken can be substituted for lean ground beef in this easy lasagna recipe.
- Minced Garlic: I like to use the minced garlic in a jar for this lasagna. You can keep it in your fridge and always have minced garlic on hand.
- Salt and Pepper: Use more or less to taste.
- Dried Onion Flakes: I like to use dried onion flakes to cut down on prep time for this lasagna. If you prefer a fresh onion, chop 1/2 yellow onion and add it to the lean ground beef.
- Diced Tomatoes: I love the flavor of fire roasted tomatoes in this skillet lasagna.
- Tomato Sauce: Canned or homemade tomato sauce both work well in this healthy lasagna recipe.
- Low Sodium Chicken Broth: You can also use water if you prefer.
- Dried Oregano: Dried Oregano is the perfect spice for Italian dishes.
- Fat Free Cottage Cheese: To keep the calorie and fat content down in this healthy lasagna recipe, I prefer to use fat free cottage cheese.

How to make healthy skillet lasagna
Step 1: In a large saucepan or deep skillet add extra virgin olive oil over medium-high heat. Add minced garlic and sauté for one minute.
Step 2: Add lean ground beef, salt, pepper, dried oregano, and dried onion flakes. Cook until meat has browned and is cooked through.
Step 3: Pour tomato sauce, diced tomatoes, chicken broth or water, and pasta noodles, and stir until well combined.
Step 4: Cover with a lid and bring to a boil. Once it has been brought to a boil, reduce heat and simmer 14-15 minutes or until noodles are tender and cooked through.
Step 5: Remove from heat and stir in fat free cottage cheese, and sprinkle part skim mozzarella cheese over top.
Step 6: Cover for 1-2 minutes or until shredded cheese is melted.
Step 7: Sprinkle with fresh chopped basil if desired. Enjoy!

- Substitute any ground meat of choice such as ground pork, turkey, chicken or sausage in this healthy lasagna.
- Substitute 8 regular lasagna noodles, broken into small pieces, for the bowtie pasta.

How to store leftovers for healthy lasagna
If you happen to have any leftover skillet lasagna, place in an airtight container and place in the fridge for up to 3-4 days. When you are ready to reheat, microwave for 45-60 seconds or until warm throughout. I like to add a little more fat free cottage cheese after re-heating for a little extra creaminess.

- 8 oz. dry farfalle pasta (bowtie) (white, gluten free, or whole wheat)
- 1 14.5oz. can diced tomatoes
- 8 oz. can tomato sauce
- 2 cups low sodium chicken broth or water
- 1 1/2 tsp. dried oregano
- 1 Tbsp. dried onion flakes
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2/3 cup fat free cottage cheese
- 1 cup part-skim mozzarella cheese
- sprinkle of parmesan cheese (optional)
Instructions
