This Healthy One Pot Skillet Lasagna is made with lean ground beef, tomato sauce, seasonings, fat free cottage cheese, and part-skim mozzarella cheese. You get all the flavors of a classic lasagna without the mess and time involved. This one pot lasagna recipe is a perfect 30 minute meal for busy weeknights.

I’m always trying to create 30 minute meals that are delicious, and this Healthy One Pot Skillet Lasagna is one of my families favorites! It’s quick, easy, and has very little clean up, which is a bonus when you are trying to make an easy family dinner for those busy weeknights. Ingredients for one pot skillet lasagna
- Lean Ground Beef: Ground turkey or ground chicken can be substituted for lean ground beef.
- Minced Garlic: I like to use the minced garlic in a jar. You can keep it in your fridge and always have minced garlic on hand.
- Salt and Pepper: Use more or less to taste.
- Dried Onion Flakes: I like to use dried onion flakes to cut down on prep time. If you prefer a fresh onion, chop 1/2 yellow onion and add it to the lean ground beef.
- Diced Tomatoes: I love the flavor of fire roasted tomatoes.
- Tomato Sauce: Canned or homemade tomato sauce both work well.
- Low Sodium Chicken Broth: You can also use water if you prefer.
- Dried Oregano: Dried Oregano is the perfect spice for Italian dishes.
- Fat Free Cottage Cheese: To keep the calorie and fat content down, I prefer to use fat free cottage cheese.
- Part-Skim Mozzarella Cheese: Part-skim mozzarella cheese is used to sprinkle on top of warm lasagna and gives that cheesy goodness.
How to make healthy skillet lasagna
- In a large saucepan or deep skillet add extra virgin olive oil over medium-high heat. Add minced garlic and sauté for one minute.
- Add lean ground beef, salt, pepper, dried oregano, and dried onion flakes. Cook until meat has browned and is cooked through.
- Pour tomato sauce, diced tomatoes, chicken broth or water, and pasta noodles, and stir until well combined.
- Cover with a lid and bring to a boil. Once it has been brought to a boil, reduce heat and simmer 14-15 minutes or until noodles are tender and cooked through.
- Remove from heat and stir in fat free cottage cheese, and sprinkle part skim mozzarella cheese over top.
- Cover for 1-2 minutes or until shredded cheese is melted.
- Sprinkle with fresh chopped basil if desired. Enjoy!

Substitutions and Variations
- Substitute any ground meat of choice such as ground pork, turkey, chicken or sausage.
- Substitute 8 regular lasagna noodles, broken into small pieces, for the bowtie pasta.
- Try adding chopped vegetables to increase the volume. Chopped mushrooms and zucchini and/or spinach would be good. (Add the mushrooms when you cook the ground beef.)
- Add crushed red pepper flakes for a little spice.
How to store leftovers
If you happen to have any leftovers, place in an airtight container and place in the fridge for up to 3-4 days. When you are ready to reheat, microwave for 45-60 seconds or until warm throughout. I like to add a little more fat free cottage cheese after re-heating for a little extra creaminess.
