By tasting it, you would never know that it was any healthier than a traditional lasagna recipe.

I’m always trying to create 30-minute meals that are delicious, family-friendly, and healthy, and this Easy Healthy One Pot Skillet Lasagna Recipe is one of my family’s favorites! It’s This one pot lasagna is quick, easy, and has very little clean-up, which is a bonus when you are trying to make an easy family dinner for those busy weeknights.

Making this easy lasagna recipe is such a breeze! You will start by cooking your ground beef in the skillet. It is perfectly seasoned with salt, pepper, oregano, and dried onion flakes. Once the beef is cooked and seasoned, your next step is to add in diced tomatoes, tomato sauce, chicken broth, and pasta. Go ahead and mix it all up! Let this mixture boil and then simmer until the pasta is cooked through. Now it’s time to take it off of the heat and add in the cottage cheese. This is a healthy replacement for the ricotta that usually goes into lasagna, and you can’t even taste the difference! The last thing to do is sprinkle some mozzarella over the top, let it melt, and enjoy! In barely any time at all, your healthy lasagna recipe will be cooked and ready to enjoy!

  • Lean Ground Beef: Ground turkey or ground chicken can be substituted for lean ground beef in this easy lasagna recipe.
  • Minced Garlic: I like to use the minced garlic in a jar for this lasagna. You can keep it in your fridge and always have minced garlic on hand.
  • Salt and Pepper: Use more or less to taste.
  • Dried Onion Flakes: I like to use dried onion flakes to cut down on prep time for this lasagna. If you prefer a fresh onion, chop 1/2 yellow onion and add it to the lean ground beef.
  • Diced Tomatoes: I love the flavor of fire roasted tomatoes in this skillet lasagna.
  • Tomato Sauce: Canned or homemade tomato sauce both work well in this healthy lasagna recipe.
  • Low Sodium Chicken Broth: You can also use water if you prefer.
  • Dried Oregano: Dried Oregano is the perfect spice for Italian dishes.
  • Fat Free Cottage Cheese: To keep the calorie and fat content down in this healthy lasagna recipe, I prefer to use fat free cottage cheese.

How to make healthy skillet lasagna

Step 1: In a large saucepan or deep skillet add extra virgin olive oil over medium-high heat. Add minced garlic and sauté for one minute.

Step 2: Add lean ground beef, salt, pepper, dried oregano, and dried onion flakes. Cook until meat has browned and is cooked through.

Step 3: Pour tomato sauce, diced tomatoes, chicken broth or water, and pasta noodles, and stir until well combined.

Step 4: Cover with a lid and bring to a boil. Once it has been brought to a boil, reduce heat and simmer 14-15 minutes or until noodles are tender and cooked through.

Step 5: Remove from heat and stir in fat free cottage cheese, and sprinkle part skim mozzarella cheese over top.

Step 6: Cover for 1-2 minutes or until shredded cheese is melted.

Step 7: Sprinkle with fresh chopped basil if desired. Enjoy!

Popular Substitutions and Variations

  • Substitute any ground meat of choice such as ground pork, turkey, chicken or sausage in this healthy lasagna.
  • Substitute 8 regular lasagna noodles, broken into small pieces, for the bowtie pasta.
  • Try adding chopped vegetables to increase the volume of this one pot lasagna. Chopped mushrooms and zucchini and/or spinach would be good. (Add the mushrooms when you cook the ground beef.)
  • Add crushed red pepper flakes for a little spice.

How to store leftovers for healthy lasagna

If you happen to have any leftover skillet lasagna, place in an airtight container and place in the fridge for up to 3-4 days. When you are ready to reheat, microwave for 45-60 seconds or until warm throughout. I like to add a little more fat free cottage cheese after re-heating for a little extra creaminess.

This recipe swaps out hearty ingredients for lighter, such as fat free cottage cheese and part skim mozzarella instead of other more fatty cheeses. You can also swap out the ground beef for ground turkey to make it even leaner. 

Do I have to drain the cottage cheese before I add it into the lasagna?

Nope! You can add the cottage cheese right into the lasagna without draining.

If I use fresh onion instead of dried onion do I need to change the cook time?

Nope! You can sauté it before you add in the beef, and it will be good to go!

  • 8 oz. dry farfalle pasta (bowtie) (white, gluten free, or whole wheat)

    Fan favorite!! We love this recipe. I always add more cottage cheese in each bowl for more protein & cools it down for the little kids. I sub banza pasta for more protein too.
