Until I got my Instant Pot I used to make baked potatoes in a slow cooker or in the oven. But, now I won’t make them any other way. They cook so much faster in a pressure cooker and I don’t have to wrap them in foil. This makes it a great way to put together an easy meal with little effort. Ingredients For Instant Pot Baked Potatoes

  • Potatoes: I recommend using medium-sized whole russet potatoes. Once baked they have a fluffier interior and crispy skin.
  • Water: Nothing special here, just plain old tap water.

What You Will Need To Make Instant Pot Potatoes

  • Instant Pot: I used the 6 quart Instant Pot Duo for this recipe.
  • Glass Measuring Cup: I love this set of Glass Measuring Cups and I use them for most of my recipes.
  • Tongs: You will need some Tongs. So that you don’t burn your hands removing the potatoes from the Instant Pot.

How To Make Potatoes In The Instant Pot

  • Add 1 cup of water to a 6-quart or larger Instant Pot. Place the metal trivet inside.
  • Pierce potatoes with a fork and place them on the trivet.
  • Put the lid on Instant Pot and set the valve to sealing. Select pressure cook high, high pressure. Set a time to cook for 15 minutes.
  • When the potatoes are done cooking, turn off the Instant Pot and let the pressure naturally release for 12 minutes. Then turn the valve to release allow any remaining pressure to be released.
  • Remove potatoes, cut each potato in half lengthwise; and top with your favorite toppings. Enjoy!

How Long To Cook Potatoes In The Instant Pot

The size of the potato will make a big difference in how long the potatoes will need to cook in the Instant Pot. To begin you will want to use potatoes that are about the same size. This will allow them to be cook evenly and finish cooking at the same time. The cook times below are for cooking 1-4 potatoes at a time in a 6 quart Instant Pot Duo. For each additional potato add 1 minute of cook time and natural pressure release time.

  • Large Potatoes: (10 to 12 ounces each) Cook for 18 minutes on high pressure, with a natural pressure release of 15 minutes.
  • Medium Potatoes: (8 to 10 ounces each) Cook for 15 minutes on high pressure, with a natural pressure release of 12 minutes
  • Small Potatoes: (6 to 8 ounces each) Cook for 12 minutes on high pressure, with a natural pressure release of 10 minutes.

The average total time to make the potatoes was 30 to 35 minutes. This includes the time for the Instant Pot to come to pressure, cook time, and natural release.

Tips For The Best Instant Pot Baked Potatoes

  • Wash and scrub your potatoes
  • Poke the potatoes 8 to 10 times with a fork. Penetrate it at least 1/2 inch deep to help them cook faster.
  • Make sure to use the wire rack provided with your Instant Pot. You want to steam the potatoes and not boil them. If you do not use the wire rack your potatoes can come out mushy.
  • Do not fill the water level above the wire rack.

What Are The Best Potatoes To Use?

Russet potatoes are hands down the best potatoes when it comes to baking them. The high starch content helps them become light and fluffy when they are baked in an Instant Pot. Other varieties of potatoes like red and yellow potatoes are waxier. When baked they become more soft and creamy.

How Can I Make The Skin Crispy?

Once the potatoes are done cooking, place them on a baking sheet, spray with cooking spray and sprinkle with coarse sea salt. Preheat the oven to broil and broil the potatoes for 3-4 minutes. This will be the perfect amount of time to add a crispy outer layer to the fluffy potatoes.
