We love soft oatmeal breakfast Bars in our house. They are the perfect grab and go breakfast or a delicious wholesome after school snack. This oatmeal recipe is simple and quick and can be made on any busy morning. My kids love waking up to the smell of baked oatmeal in the mornings, and I love that they are getting a hearty and healthy breakfast before they head out to school. Ingredients for oatmeal breakfast bars
- Old Fashioned Oats: Using old fashioned oats will give these breakfast bars a chewy texture, and are a healthier alternative to flour.
- Bananas: Over ripe mashed bananas work best, and give off a sweeter flavor. Bananas replace the need for butter or eggs, but still have that sweet flavor and soft texture.
- Peanut Butter: Any nut butter will work great. Almond, peanut, etc.
- Maple Syrup: Maple syrup provides the sweet flavor we love, but you can also use honey.
- Chocolate Chips: I love adding chocolate chips, but adding dried fruit would also be delicious.
How to make oatmeal breakfast bars
- Preheat oven to 350F and line an 8X8 inch pan with parchment paper.
- Add oats, mashed bananas, peanut butter, maple syrup, and chocolate chips to a medium-large mixing bowl.
- Stir ingredients until fully combined.
- Pour batter into prepared baking pan, and top with additional chocolate chips if desired.
- Place in the oven and bake for 14-15 minutes or until the edges start to brown, don’t over bake.
- Remove from the oven and allow to cool for 10 minutes before serving. Enjoy!

Ingredient Substitutions
- Rolled Oats: You can substitute old fashioned rolled oats with quick oats, however it will not yield the same chewy texture. Try adding half rolled oats and half quick oats.
- Bananas: You can substitute bananas with un-sweetened applesauce or pumpkin puree. Neither of these substitutions will be as sweet, but will still give you the same texture.
- Peanut Butter: Peanut butter can be substituted with any creamy nut butter. Almond butter and cashew butter are both great options.
- Maple Syrup: Maple syrup can be substituted with honey or agave nectar and both taste great.
How to store breakfast bars
Store soft baked oatmeal in an airtight container in the fridge for up to 5 days. If you prefer you oatmeal bars warm, pop them in the microwave for 20-30 seconds and enjoy!
