I love just about anything that can be made in the Instant Pot, but this Root Beer Pulled Pork has to be one of my favorites. It is so easy to make and is packed with delicious flavors. It makes a great weeknight dinner or even a great dish to take to a potluck dinner. Because it is cooked in the Instant Pot, it is very quick to make, and it is so delicious that everyone in your family will be asking for seconds (and thirds).
When I say that itโs easy to make, that is an understatement! You simply pour the root beer and the onion soup packet into the Instant Pot, then add your pork. Once it is finished cooking, it is tender enough to shred with forks. After that, all that is left to do is toss the meat in your favorite barbecue sauce, and you have a great dinner ready! You can enjoy this on its own, as a sandwich, on nachos, or even on a salad.

Ingredients For Your Instant Pot Root Beer Pulled Pork
- Pork: You can use any of these boneless pork roasts. Pork shoulder, pork tenderloin, or pork butt all work great and turn out juicy and tender every time.
- Root beer: Use a good quality root beer with lots of flavors. It will give the pork a sweet taste.
- Onion Soup: I like to use Lipton onion soup because I always have it on hand.
- Barbecue Sauce: I like to use homemade BBQ sauce. But if I don’t have any on hand THIS is my favorite BBQ sauce for this recipe.
- Buns: Use your favorite roll or hamburger bun.
How To Make Instant Pot Root Beer Pulled Pork
- Pour root beer and onion soup into the Instant Pot. Stir together until well combined.
- Place the pork chunks into the Instant Pot.
- Put the lid on Instant Pot and set the valve to sealing. Select pressure cook high, high pressure. Set a time to cook for 60 minutes. (note: if your roast is larger than 3 pounds. Add an additional 20 minutes for every pound.)
- When the pork is done cooking, turn off the Instant Pot and let the pressure naturally release for 15 minutes. Then turn the valve to release allow any remaining pressure to be released.
- Remove the lid and remove pork. Drain 3/4 of the liquid out and add the pork back inside.
- Shred pork using 2 forks.
- Add 2 cups of barbecue sauce to the pork and stir.
- Serve bbq pork on sandwiches, salad, nachos, etc.
Tips
This is such an easy recipe to make that there is not much that can go wrong. But here are a few tips that will help bring this pulled pork over the top.
- Divide: Cut the pork roast into 4 equal parts. This will help the pork cook faster and more evenly in the Instant Pot.
- Trim: Trim all of the excess fat of the pork roast surface. This will allow the seasonings and liquids to penetrate the meat for the most flavor. Leave the fat on the inside of the meat. It will help make the meat tender during the cooking process and add flavor.
- Soda: If you do not have root beer on hand you can substitute Dr. Pepper or Coca-Cola. Most dark sodas will work well. Just make sure that you don’t use a diet soda.
- Natural Release: Anytime that you cook any meat in an Instant Pot you should naturally release the pressure. This helps the juices and flavors absorb back into the meat.

One of my favorite things about BBQ pulled pork is that is can be served on just about anything. These are some of my family’s favorite ways to enjoy it.
- Sandwiches: Root beer pulled pork sandwiches are my family’s favorite way to eat it. We will put it on hamburger buns, hard rolls, brioche buns and even Hawaiian sweet rolls.

This pulled pork, once completely cooled, can be stored in the fridge in a sealed container. It will last for up to 3 days. To reheat, heat individual portions in the microwave for 1-2 minutes, or until warm. You can also reheat this pork in the oven. Preheat the oven to 350 degrees and cook the meat for 20-30 minutes.
You can also freeze this pulled pork. You can freeze the whole batch or divide it into individual servings. Once it has completely cooled, place it in an air-tight, freezer-safe container. It will last for up to 6 weeks in the freezer. Thaw completely in the fridge before reheating.
