Ingredients Needed for Olive Garden Zuppa Toscana Soup
Make sure to check out the recipe card for a full list of the ingredients.
- Ground Italian sausage – The meat of the soup is made from ground Italian sausage. When buying the sausage, reach for a ground variety that is at least 20% fat to create a creamy and flavorful soup.
- Unsalted butter – You will need a small amount of butter to cook the onions and sausage in the soup.
- Yellow onion– The onion is an essential ingredient in this soup and needs to be finely chopped. You can also use a sweet onion if you would like a mild sweetness in the soup.
- Yellow potatoes– The yellow potato is used because of its creamy texture and ability to hold up well even after cooking for a long time. Red potatoes or white potatoes can be substituted.
Substitution Options
- Instead of kale, you can use spinach, chard, or other hearty greens in the soup.
- If you are unable to find ground Italian sausage, you can easily substitute it for another type of ground meat such as ground turkey or ground beef.
- You can leave out the cream or replace it with a non-dairy creamer if you prefer.
- Feel free to add extra broth or water if you don’t like how thick the soup is!
- Want it a little spicier? Feel free to add in some crushed red pepper flakes or some chopped fresh chilies to the soup.
How to Make Zuppa Toscana Soup in the Slow Cooker
In a large skillet over medium heat, cook the sausage until browned and crumbled. Transfer the cooked sausage to your slow cooker along with the onion, potatoes, butter, broth, and seasonings.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender. Once the soup is cooked, stir in the kale and cream and cook for an additional 5-10 minutes until heated through.
Serve warm with croutons or enjoy as is! Garnish with parsley if desired. Enjoy this delicious recipe for Toscana Soup.
Is Zuppa Toscana Spicy?
There is some variation in the spiciness of Zuppa Toscana soup, depending on how much and what type of ground sausage you use. Many recipes call for spicy Italian sausage, which can add a bit of heat to the soup. If you prefer a milder flavor, you can substitute mild or sweet Italian sausage instead.
Is this Olive Garden Soup recipe healthy?
Zuppa Toscana is a fairly healthy and wholesome soup, as it is made with nutrient-dense ingredients like kale, potatoes, and onions. However, it can be high in saturated fat due to the use of ground meat and butter in the recipe.
You can make some adjustments to make the soup healthier overall by using leaner ground meat, reducing the amount of butter used in cooking, and sprinkling on some extra veggies or spices.
What can I serve with Tuscan Soup?
Tuscan soup can be served on its own as a hearty and filling meal. However, you may also want to serve it with some sides or toppings that complement the flavor of the soup.
Some options include freshly-baked bread, crackers or croutons, a green salad, or Parmesan cheese. You can also garnish the soup with some fresh herbs, such as parsley or thyme.
If you are looking for a more substantial addition to your meal, try pairing it with a small portion of protein like grilled chicken or shrimp.
Overall, the Olive Garden Zuppa Toscana Soup is a delicious and comforting soup that can be customized to your tastes.
