I donโ€™t know about you, but I am always looking for new ways to cook chicken breasts.  Once I tried this spinach & cheese stuffed chicken recipe, there was no going back.  It easily became a favorite dinner at my house!  The chicken is baked until it is juicy and tender, and the seasonings really complement the cheesy, spinach filling. Even your picky eaters will love this chicken recipe.

While this dinner looks fancy on a plate, itโ€™s pretty simple to make.  Simply mix your stuffing, butterfly your chicken breasts, stuff them, season them, then cook them!  Youโ€™ll have a delicious dinner on your table in no time.  The hardest part will be waiting on them to come out of the oven.

How To Make A Spinach Stuffed Chicken Breasts with Cream Cheese

  1. Preheat the oven to 425ยฐ F and move the rack to the center.
  2. In a medium bowl add cream cheese, mayonnaise, garlic, black pepper, onion powder, spinach, mozzarella cheese, and Parmesan cheese. Mix until well incorporated.
  3. Butterfly the chicken breast ยพ of the way through. Open the chicken breast and add ยผ of the cheese filling. Fold the chicken breast shut and season with salt, black pepper, onion powder, paprika, and Italian seasoning. Repeat on all chicken breasts.
  4. Add olive oil to an oven-safe skillet over medium heat. Add in chicken and cook for 4 minutes on each side.
  5. Then, bake the chicken for 12-15 minutes or until the chicken reaches an internal temperature of 165ยฐ and the cheese filling is completely melted.
  6. Serve while hot and enjoy!

How To Reheat & Store Spinach & Cheese Stuffed Chicken Breast

This spinach & cheese stuffed chicken can be stored in a sealed container in the fridge for up to 3 days (even though it never makes it that long in my house without being eaten). You can reheat in the microwave or the oven (350 for about 10 minutes, or until warm).

This dish can also be frozen.  Just let them completely cool, then put them in an air-tight container in the freezer.  They will last up to 4 weeks.  Completely thaw then reheat in the oven at 350 until theyโ€™re warm.

Can I use frozen spinach?

While I definitely prefer fresh spinach, you can use frozen spinach if that is what you have on hand. Youโ€™ll want to let the spinach thaw and squeeze out all the excess water before using it.

How do I keep the stuffing in the chicken breasts?

Once you have stuffed the chicken, youโ€™ll want to fold it over to keep the stuffing in.ย  If it seems to be overflowing, you can always stick a toothpick in the chicken breast to help it stay put.

Can I use other kinds of cheeses?

Sure! Youโ€™ll just want to make sure that whatever kind of cheese you use melts well when it cooks.
