Stuffed Pepper Soup takes a classic stuffed pepper and makes it into a delicious soup recipe. Its one of those soups that you need to make when your looking for a hearty soup recipe to warm you up on those cold evenings. This stuffed bell pepper soup is easy to throw together and freezes really well. It’s hearty, filling, and loaded with so much flavor. Ingredients needed for stuffed pepper soup

  • Lean Ground Beef: I used lean ground beef, but you can use sausage or ground turkey if you prefer.
  • Bell Peppers: I like the flavor of red and green bell peppers, but if you like a sweeter soup, substitute the green bell pepper for an orange.
  • Onion: This recipe calls for a medium yellow onion.
  • Minced Garlic: I prefer to use the minced garlic in a jar. It’s so easy to have on hand when you need minced garlic.
  • Salt and Pepper: Use more or less to your taste.
  • Italian Seasoning: Adds a great flavor to the soup. If you don’t have Italian seasoning, you can use 1/2 tsp. dried oregano, 1/2 tsp. dried basil, and 1 tsp. parsley flakes.
  • Beef Broth: I use low sodium beef broth to keep the salt content down.
  • Rotel Diced Tomatoes: I used Rotel diced tomatoes with green chilis because I like a little spice to my soup. If you don’t like spice, substitute for regular diced tomatoes.
  • Petite Diced Tomatoes: Are just like regular diced tomatoes, only cut smaller. You can use regular diced tomatoes if that’s what you have on hand.
  • Tomato Sauce: I used can tomato sauce, but you can use homemade if you have it.
  • Rice: I find that when using minute rice in this soup, the rice doesn’t become mushy. You can use white or brown.

How to make stuffed pepper soup on the stovetop

  • In a large pot add ground beef, salt, and pepper and brown meat until cooked through. Drain any extra fat and place cooked ground beef in a bowl and set aside.
  • Add oil, chopped onion, and chopped bell peppers to the large pot and sauté the veggies for 3-4 minutes, stirring occasionally.
  • Next add the minced garlic and cook for another 30 seconds.
  • Pour beef broth, diced tomatoes, tomato sauce, Italian seasoning, and cooked ground beef into large pot. Bring to a slow boil, cover, reduce heat, and simmer for 25-30 minutes.
  • While the soup is simmering, prepare your rice. Bring 1/2 cup water to a boil, add 1/2 cup of minute rice, stir, cover, and remove from heat.
  • After soup has simmered and peppers are tender, add cooked rice and stir well.
  • Serve warm with cheese if desired.

How to make stuffed pepper soup in a slow cooker

  • Brown Beef, salt, and pepper in a skillet and add it to a crockpot
  • Add oil and chopped onions to a medium skillet and sauté for 2 minutes.
  • Add garlic and continue cooking for 1 minute. Transfer onions and garlic to the slow cooker.
  • Add chopped bell peppers, beef broth, diced tomatoes, tomato sauce, and Italian seasoning to your crock pot.
  • Cover and cook on low for 6 hours.
  • Prepare rice about 20 minutes before serving. Bring 1/2 cup water to a boil, add 1/2 cup of minute rice, stir, cover, and remove from heat.
  • Once soup has cooked, add cooked rice and stir well.
  • Serve warm with cheese if desired.

What should I serve stuffed pepper soup with?

I like to serve this Stuffed Bell Pepper Soup with any type of fresh bread. My family loves to dip garlic knots in their soup and have a little side green salad along with their soup. This is a fairly hearty soup, and fills my family up, so I don’t have to prepare many sides to go with it.

Stuffed pepper soup freezer meal

  • Combine all ingredients except broth into a zip lock bag.
  • Freeze for up to 3 months.
  • When ready to prepare thaw in the refrigerator overnight.
  • Dump into a slow cooker and add broth or water and cook on low for 6-8 hours on low.
  • Prepare rice according to directions below.
  • Add rice to cooked soup just before serving.

  • 1 lb. lean ground beef
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 Tbsp. oil
  • 1 medium yellow onion, chopped
  • 1 medium red bell pepper, chopped
  • 1 medium green bell pepper, chopped
  • 1 tsp. minced garlic
  • 2 tsp. Italian seasoning
  • 1 -14.5 oz. can low sodium beef broth
  • 1 -14.5 oz. can Rotel diced tomatoes with green chilis, (use regular diced tomatoes if you don't like the spice from green chilis)
  • 1 -14.5 oz. can petite diced tomatoes
  • 1 15 oz. can tomato sauce
  • 1/2 cup minute rice, uncooked
  • 1/2 cup water
