How to make peach hand pies with vanilla glaze

I am all about simple, delicious dessert recipes, and this Peach Hand Pies Recipe is one of them. Start by removing pie crusts from the fridge and allow them to come to room temperature while you prepare your filling. In a medium size mixing bowl add peach pie filling, cinnamon, lemon juice, and mix well to combine. Unroll pie crust and cut 6-7 circles with a 4″ cookie cutter (I used a wide mouth mason jar lid).

Add 1 Tbsp. peach pie filling in the center of each pie crust circle. Fold in half and press with the end of a fork to seal edges completely. Poke each hand pie with a fork to prevent them from bursting. Brush each hand pie with a beaten egg white, and bake in a preheated oven for 15 minutes or until hand pies are golden brown.

While your peach hand pies are baking, you can prepare the vanilla glaze. In a medium size mixing bowl add powdered sugar, milk, and vanilla extract. Whisk ingredients together until smooth.

Remove pies from baking sheet while they are still warm and drop them in the glaze one by one, coating them completely. Place on a cooling rack with parchment paper underneath, and allow them to set for 5 minutes before serving. Enjoy!

Ingredients

  • 1 box refrigerated pie dough (2 pie crusts)
  • 1 21oz. can of peach pie filling
  • 1 tsp. cinnamon
  • 1 tsp. lemon juice
  • 2 1/2 cups powdered sugar
  • 1/4 cup milk
  • 1 1/2 tsp. vanilla extract
  • 1 egg white, beaten

Instructions

  • Preheat oven to 425F and place parchment paper or lightly grease a large cookie sheet.
  • Remove pie crusts from the fridge and allow them to come to room temperature while you prepare the filling.
  • In a small to medium size bowl add peach pie filling and cut them into small chunks with a knife and fork.
  • Add cinnamon and lemon juice and stir to combine. Set aside.
  • Unroll pie crusts and cut 6-7 circles out of each pie dough using a 4" cookie cutter.
  • Add 1-1 1/2 Tbsp. of peach pie filling into the center of each pie crust circle. Fold in half and press with the end of a fork to seal edges completely. Poke each hand pie with a fork to prevent them from bursting.
  • Beat egg white in a small bowl until frothy. Brush egg white over the top of each hand pie and bake in a preheated oven for 15 minutes or until browned.
  • While your hand pies are baking, prepare the glaze. In a medium size mixing add powdered sugar, milk and vanilla. Mix until it becomes smooth.
  • Remove pies from baking sheet while they are still warm and drop them in the glaze one by one, coating them completely. Place on a cooling rack with parchment paper underneath, and allow them to set for 5 minutes before serving. Enjoy!
