How to make the best strawberry cream cheese crepes
Crepes are so easy to make and can be made the night before for a restaurant style breakfast or brunch on any morning. One thing to know when making crepes, is that the crepe batter must sit in the fridge for at least an hour before cooking. Resting the crepe batter will allow the flour to fully absorb the liquid and gives the gluten a chance to relax. I like to whip up my crepe batter the night before and pull it out in the morning when I’m ready to cook.
- In a medium size mixing bowl add heavy whipping cream and 4 TBS powdered sugar. Then, mix with a hand mixer until whipping cream comes to a soft peak.
- Next, add whipped cream to the cream cheese mixture and fold together to combine. Set aside in the fridge until you are ready to assemble your crepes.
- Add eggs, milk, butter, sugar, vanilla, salt, and flour to your blender. Mix the crepe batter for 15-20 seconds or until fully combined. Place batter in the fridge for at least an hour or overnight.
- Remove crepe batter from fridge and spray a medium size non stick skillet with cooking spray. Add 1/4 cup of batter to warm skillet and turn pan from side to side to allow batter to form an even circle.
- Cook crepe over medium heat until the top appears to look dry and slides in the pan easy.
- Flip crepe over and cook and additional 15-20 seconds. Remove from pan and stack crepes until ready to eat.
- Spread about 1/4 cup of filling down the crepe and add fresh strawberries.
- Roll up your crepe, top with whip cream and strawberries, and sprinkle with powdered sugar! Enjoy!
