How to make strawberry and cream crepes

Crepes are so easy to make and can be made the night before for a restaurant style breakfast or brunch on any morning. One thing to know when making crepes, is that the crepe batter must sit in the fridge for at least an hour before cooking. Resting the crepe batter will allow the flour to fully absorb the liquid and gives the gluten a chance to relax. I like to whip up my crepe batter the night before and pull it out in the morning when I’m ready to cook.

Start by adding eggs, milk, butter, sugar, vanilla, salt, and flour to your blender. Mix the crepe batter for 15-20 seconds or until fully combined. Place in the refrigerator for at least an hour or overnight.

Once crepe batter has been refrigerated for at least an hour, you are ready to cook your crepes. Spray an 8-10 inch non stick skillet with cooking spray and add 1/4 cup of crepe batter into pan. Turn pan from side to side to allow crepe batter to form an even circle. Cook crepe over medium heat until the top appears to look dry and slides in the pan easy. Flip crepe over and cook and additional 15-20 seconds. Remove from pan and stack crepes until ready to eat.

How to make cream cheese crepe filling

This is by far the best cream cheese spread and goes great with these easy strawberry crepes. In a medium size mixing bowl add, softened cream cheese, powdered sugar, lemon juice, and vanilla. Mix well with a hand mixer until smooth.

In another medium size mixing bowl, add heavy whipping cream and 4 TBS powdered sugar. Mix with a hand mixer until whipping cream comes to a soft peak.

Next, add whipped cream to the cream cheese mixture and fold together to combine.

Assembling strawberries and cream crepes

This is where you can customize the crepe to everyone’s liking. Add as much or as little of the cream cheese filling and strawberries as you want. Spread about 1/4 cup of filling down the crepe and add fresh strawberries.
