It’s an easy meal made that can be made and on the table in less than 30 minutes.
Ingredients needed for creamy chicken fajita pasta
- Chicken Breast
- Olive Oil
- Fajita Seasoning
- Bell Peppers
- Onion
- Minced Garlic
- Half And Half
- Lime Juice
- Monterey Jack Cheese
- Pasta Noodles
How to make the best chicken fajita pasta
- Cook pasta according to package directions until al-dente.
- While pasta is cooking, heat olive oil in a large skillet over medium-high heat, add cubed chicken breast and fajita seasoning. Stir chicken and seasoning to combine well.
- Cook chicken for 2-3 minutes, then add sliced peppers and onion.
- Cover and continue to cook until chicken is completely cooked and peppers and onions are slightly softened.
- Stir in minced garlic and continue to cook for 30 seconds.
- Pour in half and half and shredded cheese, stir to combine. Simmer over low heat until slightly thickened.
- Add lime juice and stir well.
- Add cooked pasta and stir to coat all the ingredients well.
- Serve immediately. Top with shredded cheese and chopped cilantro if desired.
Tips and FAQ’s
- You can use any medium size pasta noodles such as penned, bowtie, and ziti. Whole wheat pasta is also a great option.
- Replace the chicken with shrimp for a delicious shrimp fajita pasta. Because shrimp cooks very fast, I would recommend sautéing the peppers and onions until slightly soft before adding the shrimp.
- If you don’t have fajita seasoning on hand, you can use two teaspoons paprika, one teaspoon, chili powder, and a half teaspoon ground cumin.
- For an even creamier sauce, try adding 4 oz. of cream cheese with the half and half and shredded Monterey Jack cheese.
