There is something about this time of the year that gets me excited to eat caramel popcorn. Maybe it’s the cool Fall temperatures that brings out the caramel corn lovers. Ingredients for the softest Caramel Popcorn
- Popcorn: This caramel corn recipe can be made with bagged microwave popcorn, movie theater popcorn, or pop your own on the stove or in an air popper.
- Butter: I like to use salted butter, for that sweet and salty flavor, but unsalted butter also works well.
- Brown Sugar: Use light or dark brown sugar.
- Corn Syrup: Use light corn syrup, not dark.
- Sweetened Condensed Milk: To cut down on the fat and calories, use fat free sweetened condensed milk.
- Vanilla: This is optional, but I like the added flavor.
How to make the best caramel popcorn
- Place the popped popcorn in a large mixing bowl, and remove any kernels. Set aside.
- In a medium saucepan combine butter, brown sugar, and corn syrup. Heat the ingredients over medium-low heat until the butter is melted and the ingredients are combined.
- Pour sweetened condensed milk into saucepan and bring to a boil. Reduce to a simmer and continually stir for 3-4 minutes, making sure caramel doesn’t burn.
- Remove from heat and stir in vanilla.
- Immediately pour caramel over popcorn and stir to coat all the popcorn well.
- Allow caramel popcorn to cool slightly before serving. Enjoy.
